Aging: Aged in vats for 7-8 months
2016 Michel Chevre Clos de l'Ecotard Saumur Blanc Loire, France Selosse supple testament of a wine—inFrom a south facing limestone slope in Courchamps, organically and biodynamically farmed. Hand harvested Chenin Blanc, fermented with native yeasts in 400L and 228L barrels (1 3 new), then aged on fine lees for 12 months.
